Fettucine with lemon sauce

This pasta recipe is great as a main dish or as a side dish as well (perfect with fish)

Ingredients:

400 g fettucine
Zest of 1 lemon
1 bunch of frsh parsley basil really finely chopped
2 tablespoons olive oil
2 tablespoons butter
120 g ricotta cheese
Parmesan cheese

Method

In a saucepan heat some water with salt.
Cook the pasta al dente in boiling water according to the package instructions
Clean the lemon and get the lemon zests. Cut the lemon zest into small strips and extract the juice from the lemon.
In a skillet heat the olive oil. Add the lemon zest and sauté for 1 minute.
Add the 2 tablespoons butter. Once the butter is melting add the ricotta cheese.
Stir until well combined. Stir in the parsley.
Add the pasta and cook for 1 minute.
Sprinkle with parmesan cheese and serve.
